Harvested exclusively in China's Fujian province, this rare flush consists entirely of plump, uniform, unopened spring buds covered in a soft velvet down. It yields a pale, shimmering straw-colored liquor with a sweet, woodsy body and a breathtakingly clean floral finish.
  • White Peony (Pai Mu Tan): A magnificent, multi-layered selection comprising one unopened bud and two young, freshly unfurled leaves. The Master Guide to Steeping Fine White Tea

Because the young buds and leaves of white tea are highly delicate, they must never be subjected to boiling water, which scalds the leaves and destroys their subtle aromatic volatile oils. To prepare a flawless cup, draw fresh, cold water and heat it gently until it reaches a precise temperature between 75°C and 80°C (167°F to 176°F).

Allocate one to two teaspoons of loose leaf for every 8 ounces of water, allowing ample room in a spacious mesh infuser basket for the leaves to expand completely. Steep fine leaves for 3 to 4 minutes; however, if you are brewing pure Silver Needle buds, extend the steep time to 5 or even 7 minutes, as the thick, downy buds require more time to fully yield their liquor. White tea is best enjoyed entirely neat—without milk, sugar, or honey—allowing the pure, unadulterated craftsmanship of the estate masters to shine through completely.
