Clotted cream does coagulate when cold, so this works best served at room temperature, and spreads smoothly! Keep in mind that once opened, the jar should be used or discarded within 3 days - if you have a smaller family or gathering, you might do better to purchase the smaller size jars. This size is perfect for a larger family or a tea gathering!
